Description
Physalis – also known as Inca Berries – are typically a yellowish fruit encased in a papery shell, and originate from the Americas. With a mild, refreshingly acid and a subdued sweet and sour flavour they can be used hot or cold, fresh or prepared. From the same family as the tomato, they can be used in many of the same ways. As for the dried fruit, it is similar to raisins and can be used like them. Despite being a subtropical fruit, it has adapted quite well to the portuguese climate and, as such, it is now cultivated all over the country. The fruit we use is all produced by local fruit growers – in case you’re interested you can check who produced the fruit in every package.
Production
Our physalis snacks are easy to make, but the process takes time.
We start by putting the fruit inside greenhouses, specially built to protect the fruit while it dries in the sun. After it has dried considerably, we finish drying the fruit in a wood oven.
As the fruit dries the flavour intensifies.
The fruit takes about 3 days to dry – depending on the wheather. After it is ready it is then packaged.
