Our cider vinegar is made 100% out of organic apples produced on the portuguese Oeste region. We produce it using traditional methods, and we leave it unpasteurized. With a smooth flavour and a slight taste of cider it is one of our most popular products. It is available in 25cl and 1lt bottles.

Description

This was our second product, from our line of condiments and seasonings, to be made available. Under the motto 100% – 100% organic, 100% portuguese – this product intends to show that there are also organic seasonings of quality made in Portugal.

Our cider vinegar is made 100% out of apples produced on the Oeste or West region of Portugal and it is made available in 25cl and 1lt bottles.

Production

The process used in order to produce the vinegar is simple and traditional.

We start by making apple juice and then we ferment it twice. During the first fermentation the sugar from the apples is converted into alcohol, and during the second fermentation the alcohol is converted into acetic acid. It is thus that the cider and the cider vinegar are produced.

Overall our vinegar takes about a year to be produced.

One of the characteristics of our vinegar is the fact that it is not pasteurized, unfortunately that means a lot more care must be taken with its storage conditions. Please keep it in a cool place and away from the sunlight, in order to keep it as stable as possible. A neat trick is to simply keep it in the fridge.

With time, it will eventually acquire a gelationous film – mother of vinegar – this is perfectly normal and does not keep it from being used.

Filtramos o nosso vinagre antes de o engarrafar. No entanto o nosso vinagre não é pasteurizado e como tal, com o tempo, volta a ganhar a chamada ‘mãe do vinagre’.

Se quiser que o seu vinagre ganhe a ‘mãe do vinagre’ mais rapidamente aconselhamos a que deixe a sua garrafa aberta junto a uma janela para apanhar luz e calor.

Se, pelo contrário, deseja que o seu vinagre se mantenha límpido durante mais tempo aconselhamos a que o guarde no seu frigorifico.

Caso não queira atrasar nem acelerar o processo de desenvolvimento da ‘mãe do vinagre’ pode simplesmente acondicionar o seu vinagre num local fresco afastado da exposição solar.
